Jon says reality is baked right in…he is one of the true ‘nice guys’ of our industry always willing to go the extra mile to make guests and staff happy. Don’t let the gruff exterior fool you, he’s an old softy most of the time. From simple to complex he has mastered a variety of flavour styles that are showcased as he doles out culinary adventures through Nosh Monday or coaxes the subtleties from a roasted cauliflower. Jon’s focus is always on making food extra delicious and he regularly applies his passion for southern food and Asian flavours as he shapes the Red Rabbit into one of Stratford’s most exciting places to eat.

Local-boy Adam grew up in Stratford and his beard has grown with him, to the point where at times it is become the stuff of legend. A whiskey and tattoo aficionado, he has traveled both Scotland and Ireland, accruing knowledge to help you decide on the perfect single malt to sip after your meal.
Out from behind the bar most days Adam’s mad efficiencies are being utilized as the restaurant manager at the Rabbit, learning a thing or two following Jessie from restaurant to restaurant over the last decade or so has honed him into an excellent boss man.

Courtney is our super capable, newly appointed sous chef “lady of the kitchen”. Driving daily from the wilds of London, Ontario, Courtney bring a touch of feminine class to the line. Lending her many talents to a variety of stations, she is a service anchor and particularly awesome expediter who makes possible all of the delicious things that come from our kitchen. A graduate of the Stratford Chefs School, Courtney is no stranger to working in Stratford and has been at the helm of restaurants here before.

Ms. Holmes has been on the ownership roster at The Red Rabbit from day one. Working with the team largely behind the scenes, Brittany is the mastermind behind our most delicious cocktail concoctions and has nurtured our passion for bourbon and gin since the word go. She returns to work the restaurant floor on Nosh Mondays during the winter season and can be found regularly behind the bar over at our sister restaurant: Okazu 85 Downie where she shakes and muddles the most delicious cocktails in the city Thursday through Sunday until the wee hours of the morning.

Heather Eggert

To Japan and back again, Heather is in the business of making people look beautiful when she isn’t making you feel beautiful as our warmest, kindest, most genuine service team member. She has her own makeup artistry business - check out “Makeup Artistry by Heather Sydorko” if you ever need your makeup did. This woman doesn’t ever stop, or hardly slow down, we couldn’t be more thrilled to have Heather give us some of her precious time.

Hailing from Waterloo, Dan just can’t resist Stratford and working with the team at the Red Rabbit has convinced him to relocate in this direction. A steadfast anchor on our service team, Dan has more stories to tell than you have time to listen to, I guess you’ll just have to come back over and over. Dan’s talent is best displayed out from the behind the bar where he can spend the most time serving our guests so he takes care of business in the front section where he belongs.

Tyson everitt

Tyson is an ever bouyant, beacon of clam amidst our daily storms. Though not actually a doctor, his creativity and knowledge of fermentation is applied in many aspects far beyond our day to day cooking. From naturally fermented ‘Dr. Everitt’s Peculiar Elixers’, to fresh cheese and cheese ice cream, Tyson has a wide array of skills that dazzle our guests and ourselves. A proud father of two, Tyson tries to maintain a work-life balance and we try to help by letting him head home early from time to time.
