Jon says reality is baked right in…he is one of the true ‘nice guys’ of our industry always willing to go the extra mile to make guests and staff happy. Don’t let the gruff exterior fool you, he’s an old softy - most of the time. From simple to complex he has mastered a variety of flavour styles that are showcased as he doles out culinary adventures and coaxes the subtleties from foods in ways you hadn't realized were there. I would pit Jon’s flavours plate for plate against any food I’ve had at home or abroad.

Conor Scully
RESTAURANT MANAGER | CHAIRMAN

Conor has been an integral part of our team for many years, with plenty on his horizon we are beyond pleased to have him take the helm at The Rabbit and become the driving force behind the incredibly intricate dance of management, especially during these challenging times. Conor brings a level of calm sincerity to every service, but don’t let his demeanour fool you, he has absolutely every detail in hand and honed to a very sharp edge.

COURTNEY NOBLE
SouS CHEF EXTRAORDINAIRE

Courtney is our super capable, sous chef! Driving daily from the wilds of London, Ontario, Courtney brings a touch of feminine class to the line. Lending her many talents to a variety of stations, she is a service anchor and particularly awesome expediter who makes possible all of the delicious things that come from our kitchen. A graduate of the Stratford Chefs School, Courtney is no stranger to working in Stratford and has been at the helm of restaurants here before.

BRITTANY HOLMES
GOVERNOR OF ORGANIZATION | MIXOLOGIST | OWNER

Ms. Holmes has been on the ownership roster at The Red Rabbit from day one. Working with the team behind the scenes; Brittany is the mastermind behind our delicious cocktail concoctions at all of our sister restaurants and manages all of the detail relating to everything from beer selection to boozy shakes (at BQ). She can be found regularly behind the bar here at The Rabbit where she shakes and muddles the most delicious cocktails in the city. Check out her amazing Cocktail Hour at Home program - it’s all kinds of rad.

DAN MORAN
STORYTELLER | SERVICE ANCHOR | OWNER

Hailing from Waterloo, Dan just can’t resist Stratford and working with the team at the Red Rabbit has convinced him to relocate in this direction. A steadfast anchor on our service team, Dan has more stories to tell than you have time to listen to, I guess you’ll just have to come back over and over. Dan’s talent is best displayed out from the behind the bar where he can spend the most time serving our guests so he takes care of business in the front section where he belongs.

HEATHER EGGERT

To Japan and back again, Heather is in the business of making people look beautiful when she isn’t making you feel beautiful as our warmest, kindest, most genuine service team member. She has her own makeup artistry business - check out “Makeup Artistry by Heather Sydorko” if you ever need your makeup did. This woman doesn’t ever stop, or hardly slow down, we couldn’t be more thrilled to have Heather give us some of her precious time.

JESSIE VOTARY
FEARLESS LEADER / OWNER

Writing about yourself is weird. I could pretend to write in the third person so you wouldn’t know that I am the voice behind all of these descriptions but that would feel weird also. I often call myself the mastermind behind things but I am also the plumber, grease trap expunger (when necessary), general contractor, emotional labourer, and future woman of leisure (hopefully). For now, I can be found sporting a crinoline and doing whatever needs doing to keep the empire moving forward and creating spaces where worker-owners have a chance at a retirement plan and year round employment that helps them buy houses!

SEAN COLLINS
COMPANY TOURNANT / OWNER

Old Man Collins is the man behind the man who used to be the man behind him. Did you follow all of that? Sean is an amazing chef who can run any kitchen you ask him to. He can design concepts and create menus and recipes for others to follow and he can also take direction like it is his job.

Sean has been at the helm of both The Red Rabbit and Old Man & Son (the latter is named after him - in case you were wondering). These days you will find him behind the line at The Rabbit doing exactly what he loves best “cooking food he likes to eat!”

LEE AVIGDOR
CELEBRITY CHEF

With more Stratford seasons under his belt than he would care to admit, Lee maintains the highest ranking kitchen team members for guests served pre theatre.

Eternally pleasant, Lee is the kind of buoyant kitchen team member that makes it easy to come to work. This man is a stalwart in this crazy world of constant change, an I am grateful for him daily.
